Chimichurri Sauce Recipe

Need a way to fancy up a meal without much work? Make a sauce! Simply throw some ingredients in a food processor and blend away!

So behold….my chimichurri sauce! It’s a fresh, healthy, quick, and easy recipe! Chimichurri sauce is a sauce that originates from South America that combines parsley, often cilantro, garlic, olive oil, and a few other yummy ingredients. It makes a gorgeous green sauce that tastes amazing on prettttyy much anything! I added mine to a burrito with chicken, brown rice, and a little bit of grated jack cheese….results were creamy and delicious! You can add this sauce to veggies or meat and it will pack a punch of flavor.

Interesting facts about parsley: Did you know that just two tablespoons of parsley have a whopping 153% of the recommended daily amount of vitamin K, which is necessary for the synthesis of osteocalcin, a protein that strengthens the composition of our bones. Vitamin K also prevents calcium build-up in our tissue that can lead to atherosclerosis, cardiovascular disease and stroke. Parsley also has anti-cancer and anti-inflammatory properties. Might be time to stock your kitchen with fresh herbs every week, eh?

Here’s What You’ll Need:

♦1/2 cup lightly packed flat leaf parsley leaves

♦1/3 cup lightly packed cilantro leaves

♦1/3 cup extra virgin olive oil

♦4 cloves of garlic

♦3 tbs red wine vinegar

♦2 tbs fresh lemon juice

♦1/2 tsp cumin (optional)

♦1/4 tsp cayenne pepper

♦1 tsp salt

♦1/2 tsp pepper

Here’s What You’ll Do:

Combine all ingredients in a food processor and blend until smooth. Slather over anything and eat up!

For the burrito, I cooked up some onions, garlic, black beans, chicken and brown rice together. Add a little lime if you’re feeling feisty. Add to tortilla and top with chimichurri sauce and a litttlee bit of fresh grated cheese!
